Britain/France seems like a likely one. Play as either side of the hundred years war for X years. Another possibility is somewhere within the HRE - also a place where a lot of game features are used early on.

I don't think that's exactly right. AFAIK it's just that the war leader can't change X months into the war, but it will still cascade within that time frame.I agree, and I'd love to play the Ottomans. But one thing, cascading alliances are gone.

I strongly suspect you are right. The largest gaming market for these games would the be US, and they'd probably relate more to England in this time period than any other nation. 20 years of England or France would be pretty fun.

At least, that would be fun for veterans, but probably the worst way to attract newbies...
Castille is very better for that, because you may begin colonization, may win an easy war, may deal with a vassal and create alliances, may use missionaries...
And I bet for one country in HRE, to permit seeing the HRE mechanism.
