Am I the only one who thinks it would be interesting to, either by a treaty after a war or if both of them agree, that a demilitarized zone can be created serving as a buffer zone in case of future incursions or as a way to insure that neither country has the immediate military force to do a blitz across the other?

I have some other ideas too:

Hate it when an AI colonizes that planet you don't want or can't colonize that is literally just a smidge from your border? Well, no need to worry, you could set up a Uncolonizable Zone! This will work like a demilitarized zone (everything will) but colonization and setting up frontier outpost would not be allowed, again either by treaty or by a trade deal or that sorts.

Union Military Territory, a territory that is shared between the two empires. It does not cause border friction and is a way for two countries, not in an alliance, to team up against a stronger foe (pirates, sentient drone plant, guardian, etc). Colonization isn't allowed, neither is setting up frontier outpost, but military stations and military forces can be put in the region. How are this extends can either be decided by making a variation of frontier outpost that expands this (at a lower cost) or turning territory that was already owned into it (two borders close together are turned into Union territory and combine).

Not a zone, but border cutting, this can help prevent border friction by cutting the borders down as much as one wants as long as the border is within the maximum amount allowed (how big it would be normally). The smaller the territory the tougher it would be for another empire to set up a frontier outpost/colony by it and push it back but at the same time the shortened territory could result in some systems being lost.

The above can also just make your borders look pretty.

Interesting ideas, but I feel like they would be hard to work into gameplay.

I do like the idea of demilitarization being a thing in this game. I made a suggestion very recently for a wargoal of demilitarization, where the losing nation would have their navy and army capabilities heavily debuffed. I suggested it as a way of making tributary-like states for pacifists or people who want to make the galaxy a generally peaceful place.

Those are some interesting ideas.

Getting hostile empires to agree to ignore/abandon unclaimed space seems like it would be a very tricky thing to accomplish.

On the other hand, It would be pretty cool (as a peaceful-ish empire) if we could negotiate a more powerfully binding treaty (read: really nasty penalties for breaking) where we set aside some of our own already claimed territory into a demilitarized sector that was technically ours, but abandoned, thus stopping our border expansion along those systems---as a way to non-compete and placate an otherwise dangerous neighbor.

A major issue with anything like that would be that it interacts with the different FTL drives in completely different ways. Even excluding jump drives as a beast of their own, you'll find that it affects Hyperlane FTL the most. With Warp FTL it depends a lot on the tech level and the way stars are arranged. Especially during the later stages of the game it'll be virtually impossible to truly hamper Wormhole FTL empires with anything short of a truly gigantic zone.

It would be a cool feature, no doubt, but it'd be incredibly difficult to balance in a fashion that is consistent for all empires.

Military vessels can be banned from going into systems with wormhole stations that range passes the demilitarized zone. Furthermore, there is the issue that even if they could be in a wormhole station system just along the border they can't blitz the territory, unlike hyperdrive and warp users, as they have to travel back to their original system and hop into another one, rinse and repeat, unless they bring a constructor along and wait for it.

but...it's already in the game. it's called Cleanse wargoal

though i think playes should also be able to do the same things as AI (i'm talking about diplomacy interraction when they ask you not to colonize world near their territory(and you can either accept, ignore or decline)

I would go a step further and say that you should also be able to give them something in return if they do comply, such as resources, which can help even the weak empires secure negotiations such as that.

maybe it'll be implemented when devs will decide to bring us "Diplomacy" DLC (hope it'll come with something like "espionage" or "intrigues")
