Can you, as a count or a duke just defect counties to another kingdom? Or...I am new to the game and I don't know what happens if I just get taken over, would it be possible for me to still retain my post under new leadership?

That depends on what Casus Belli they're using. It's about half and half they'll take your titles, or they'll just vassalize you. Holy War, Jihad, Crusade will strip you of your titles. Invasion might strip you of your titles, as well as some claims for your territory.
