When I anihaliate completely a barbarian army, it says in an info window that I have recieved an amount of gold and some slaves.

The money, well, it's pretty obious what that means, but when I for example receive 1.24 slaves, yellow text i believe, how does that affect me?

The title might have been - "what are the effects of slaves" , what do they do and so on. But I don't know wether these work in a separate way.

click on one of your regions, in the bottom right it'll show you the amount of freemen citizens and slaves in the area.

I believe that the slaves you get from defeating barbarians are distributed among your regions.

As Warlord said the slaves you win in a battle will get distributed along your territories. And slaves themselves increase your tax income from provinces (by offering you cheap labor to use).
