A stability hit normally only occurs when you declare without a casus belli or break a truce, most likely scenario is that Taungu will join Pegu as an ally in a defensive war. If they do: to prevent Taungu joining their side in the war you could first start a war where you have Taungu on your side. Taungu can't join Pegu if Taungu already fights a war with you.

There is also a stab hit from DoWing someone with whom you have an RM. I've done this many times to secure PUs.

I don't think you get the stab hit if your RM partner joins the war against you on the defensive side. It will break your alliance and if it causes them to hate you enough it may result in them breaking the RM as well. That's where distracting your ally by calling them into a phony war is helpful. Feel free to end the phony war once you have 25+ WS in the real war as it's not possible to send a CTA when at -25 WS or lower.

Declaring war on your ally's ally won't trigger a stability hit, but will loose you the ally if he joins his ally. So if you want to keep your ally your ally, declare war on your allies ally other ally; it will keep your aliance going.

I'm playing as Ava and I'm allied to Taungu and also have a royal marriage with them. They are also allied to Pegu. If I DOW Pegu, will I take stability hit?
Stab hit won´t incur when their allies go into wars, you can even make him co-beligerent if you want land from him aswell... Co-beligerent and defensive calls circumvent normal cases... Like you can attack into HRE aswell with co-beligerent without getting the emperor into the war too... Else take diplomatic idea group... finisher limits stab hits from such actions :)
