No, simply survivors of the last battle (which drew native's population to 0) take their families to wilder portions of the province, and ceased all relations with the newcomers. They deem it's better to leave them alone if they don't want to face utter annihilation (people are not crazy, except when named Horse).

That would only happen if you're playing Russia/Poland/Lithuania, and you end up conquering odd provs in odd areas, and hold them for long periods of time?
It'll certainly screw up the map, but it'll make slightly more sense in terms of gameplay.
Perhaps it could be made so that cultural conversion is more likely to happen when there's a prov with a national culture of yours bordering that prov isn't of a national culture. Of course, having a CB on that prov should largely increase the chance of the culture converting over some time.

The exact culture doesn't matter : there're no such close ties between french/italian/iberian than IRL, partly because culture is not only about language, but also : set of legal customs/currency/economics/culture ( :rolleyes: )/origins/etc.
Most of them can be changed by conquer!

Not always. The great majority of conquerors, at all times, kept the former institutions, at least the local ones. Otherwise, they were facing the risk of rebellions.

The same is even more true in the case of DA (inheritances and others) : the new ruler sought to be accepted, at least by the more powerful notables.

That's for the legal system, currency & customs. In the majority, it's was better to keep them. As an example, look at the events for the OE, when they conquer Byzantium : historical choices (for religious matter, there) is to keep a low-profile, without changing too much.

And as for culture (I mean folk culture, legends, litterature, clothes, etc) and origins (ethnic), this can't be changed.

Yes... the colonial case was only instituted in a late patch when it was brought up that most of the colonies that changed hands, particularly in North America and the Carribean, did not retain the culture of their original colonists. And even then, there are examples of cases where the original culture did survive (such as Quebec).
