.. The game keep shuffling it up every time I auto-balance/split it up...

Never seen that, unless you refer to commanders not in charge of a flank or not only, but of a specific single unit.
In other words, don't have your flank leaders be leaders of single units (unappoint and reappoint flank leaders) and they won't shuffle.
The Auto-balance feature doesn't really work in my opinion and i would recommend not using it
and moving units manually instead.

Afraid I can't answer your question, but I do have a question myself: How does observing work? Do I need a mod for that or is there an option somewhere?

If there's nowhere to retreat to (like in the case of Venice) they get stack wiped.What happened to an army when they're destroyed in an island? I'm playing Venice and when an enemy invaded and they were beaten, there's usually a lot of survivor still. Do they go back to the enemies levies, or they're completely gone?

I think it stays flat at -401. If a powerful vassal is not member of the council, his negative opinion about me increases with time?
I thought it was removed to reduce lag?So why was the rotate camera removed from the game before release? It would be an awesome feature and it seems like they had already done the work
