I guess it would be hard to justify not having at least a non-playable version of Judaism in game with a significant chunk of the eastern part of the map under Jewish rulers?

First of all I am extremely exited about this dlc. I can't wait to play old norse Characters along with other pagans. I maybe even more exited for the new start date, it sounds amazing. Now there is f.e. going to be an Anglosaxon England with many dynasties as opposed to the 2 major Anglo-Saxon dynasties in the early 1066 scenario.
I however have a question about the 867 scenario. How are you going to handle Iceland ? In the year 867 Iceland had only recently been discovered by the Norse and the Norse-Icelandic population was around 3 people (a man called Náttfari and a slave and a slave girl who came to Iceland and were (unintentionally?) left behind (Garðar Svafarson,Náttfari). At the time Irish monks (called papar) lived in Iceland, but that is pretty much it. Some have speculated that an Irish colony was in Iceland (and there has been a archaeological finding that may support it), but that is not confirmed.
The Norse colonization of Iceland is often said to have started in 874 when Ingólfur Arnarson (who is called the first "Landnámsmaður", even though Náttfari settled in Iceland before him) settles in what is now Reykjavík (he may settled in Reykjavík a little earlier, btw, Ingólfur and his step brother went on a exploration mission to Iceland in 867 according the Icelandic Wikipedia site about Ingólfur). By 930 the Norse colonization of Iceland was over.

I'll wager they'll have some filler characters and be treated just like all the oddly overly developed parts of Eastern Europe and the like.
