1) I started playing as the Komnenos dynasty, and assassinated the Byzantine emperor (I know, rather dishonourable, but someone had to take over to defend the Empire from the Turks). Anyway, now that I am Emperor, no one has joined my court. There are only a handful of people, just enough to fill every spot. How do I get folks to join my court? (The court of the old Emperor just transferred over to one of his sons)

2) If I take a Muslim or Catholic county or duchy, will their ruler eventually convert to Orthodox Christianity, or will they remain their respective religion. If they do, I might as well just take their territory.

1) Well you are only guaranteed a minimal amount of courtiers. For king tier, I believe it is 5 courtiers. If you ever get below that, some new ones will be generated. But remember to reload once your primary title changes, otherwise there will be some weird behaviour, as the game thinks you are an AI ruler. This might feed a few new people into your court.

Other than that, there are events that offers people to your court, but they are rather rare, and some cost a small fortune. You can try and leave your Dioces bishop position open. Eventually the Pope/Patriach will offer you someone to fill the position. Just leave it open and the even will fire again at some point. It fires a bit mroe often than any of the other events.

Besides those suggestions, I guess you will have to breed a court :) ... or wait for some realms to get destroyed and maybe some families will migrate to your court.

2) They will eventually get events that lets them convert to their liege's religion. If you ever play an vassal to a liege with a different religion, you will get the same event.

1) From my very limited experience, I think that conquering new territories helps a lot, too. At least I got quite some muslim people in my court after conquering some muslim sheikdoms.
