Brandenburg/Prussia, what can I say except Deutschland, Deutschland, uber alles! I am nearly 1/2 German so it's partly that too.
Spain, I love them when they kick the crap out of France and give me all sorts of maps early so I beat them to the Aztecs and Incas!
Teutonic Knights, what's not to like about a crusading order in this period of time. Drang nach Osten all the way! Play them for a real challenge with
Sweden, Russia and Poland-Lithuania surrounding you.

England, they occupy France's attention for a long time in my games.
Portugal, map fodder, I keep them alive so they can explore for me.
Dislike
France, they always become terribly powerful. Never see a weak France unless I beat them down. Too much manpower and fairly rich too.
Savoy, monsterous armies all over the place and a nasty mountainous homeland. They always seem to appear with a 50k army when I think things are winding down. Amazingly powerful for a bunch of scabs living in mountains.
Papal States, almost as annoying as Savoy with massive armies coming from nowhere. Damn, warmongering Pope!
Ottoman Turks, too big and powerful. I hate them and their 100k+ armies. They are France but in Muslim form.
Austria, diploannexing everything they can. So annoying! Oh look, I am HRE, Archduke of Austria, King of Hungary, Bohemia, Grand Duke of Baden, Duke of Bavaria, Wurtemburg, Lorraine etc, etc. They can die and their uber gold mine too!
Venice and Genoa, islands to protect from annexing just suck but I am learning!
Russia, they cheat with their super cheap infantry and fairly cheap cavalry. Numbers don't necessarily mean they win but it's a good way to bet! Terrible terrain and the winters and they seem to have claims on everything so they get away with murder on badboy though it's fun to remove them from the map as T.O. by 1510!
Poland-Lithuania, see Russia minus the 1510 removal...P-L is too scary.
