I'm looking for a eu4wiki entry or tooltip that is currently eluding me again :)

There seems to be some kind of coring time modifier.
A province in Mexico freshy conquered from the natives takes about twice the time to core as a double sized province recently conquered in Spain. The coring cost can be explained by the modifiers, but not the time. According to the wiki entry base coring time is 36 months, it seems to be shorter in europe and elsewhere?

I hope someone can point me in the right direction here again :)

In that case is due to culture. You can find everything about coring in the wiki (not sure if everything is updated). Here: http://eu4.paradoxwikis.com/Core

In this case you can see that among the modifiers to core duration:

"These modifiers above will stack additively (except permanent claims which cannot occur with a normal claim). Moreover a culture bonus is applied multiplicatively.
  • Province in same culture group than primary culture: -50%
  • Province has promoted culture: -25%"
As portugal you are in the iberian culture group which is the same as those spanish provinces (in Iberia) but not in the new world

Thanks again for the newbie help here :)
I overlooked that part on the wiki apparently. But it would be nice if that info were also displayed in the ingame tooltip :p
