Convert from Stockpile?

I've watched a couple videos on YT discussing the Convert from Stockpile feature when it was released a while back, and I really thought I had a handle on it. I built a bunch of Bf 110 heavy fighters - stock version, with the idea that I would upgrade the version in the future, and then convert the older stock fighters to the upgraded version. I made sure there were a bunch in what I would consider the stockpile, but I still don't have the option to upgrade them. I'm not sure what I'm doing wrong, or if there is simply no way to accomplish what I have in mind.

Try to decomission the older version

Yep, as Bjewwe says, you have to press the green button above the upgrade button to mark a design as obsolete before it's available for upgrade.

As you can see in your 3rd picture your game still thinks BF110 is a current design
