While I've seen the comments that their are still historical events that will fire if the in-game situation matches (more or less) the historical situation that led to various real-world events, I'm curious how specific they are.

e.g. Is there a Castille-Aragon union event set that only fires if the player maintains the vasalization of Aragon? Or was my choice to diplo-annex Aragon and then get a Become Spain event the "proper" way to form Spain in EU3?

There are event txt files in the game (not sure if they're in the demo) which you can check for specifics. Given what's been said here about the Ireland event, I suppose Spain depends on ownership of specific provinces. You need to own all those provinces, be at peace, and not have declined to become Spain previously. Some number of months after you've met the province conditions the event will fire; this delay is modified by things like your Centralization policy setting.
