I recently started playing CKII, and I'm having some trouble understanding exactly how this works. I declared a holy war on Valencia, and besieged and occupied all of the lands there, but I'm still not able to enforce my demands. Do I also have to occupy the lands of all of the other Muslims that joined the holy war? Is there any way for me to predict before I start a war what lands I will have to occupy in order to enforce my demands?

Your enemy is too big that occupying just Valencia would give you enough warscore right away. But as you keep occupying it, your warscore will slowly increase over time. Any other occupied holdings, as well as won battles, can also increase your warscore so that you can finish the war faster.

Oh, I didn't realize that they increased over time. I thought it was just a one time thing with occupied lands. Also, will occupying any of the enemies who joined the holy war increase my war score? Or only the lands of the Emir that I initially declared war on?

Only the person who you declared war on (though battles against their allies help your warscore).

Thanks for the help guys. I also have one more somewhat related question - is there any disadvantage to joining the war of an ally? Do you lose anything if the war is lost?

I don't think so, but I'm pretty sure you do still lose prestige (and piety if you're fighting infidels) if you lose a battle while doing so.

Yeah, you don't lose anything. But if the war drags on, then you can't enact any of the decisions that require you to be at peace.

If the enemy in the war has holdings near yours, you could be sieged or attacked. This is one thing to keep in mind when joining wars you don't necessarily plan to contribute many troops to.

Oh, I didn't realize that they increased over time. I thought it was just a one time thing with occupied lands.

Only if you occupy every single holding in the target of the war (whether that be a county, a duchy, or a kingdom - in this case the Duchy of Valencia). If the enemy controls every single holding then their warscore increases with time.

If your holy war is for Valencia and you hold every single holding in that duchy then there's nothing you need to do except wait and defend the captured holdings, before long it'll tick up to 100%.

You can wait, but in holy wars it's usually a better idea to continue bringing the fight to the enemy and taking more counties to force the warscore to 100% as fast as possible, as other independent realms will usually join the fight against you, and unless you invited a lot of allies to the party, that can be a lot of enemy firepower. There's nothing worse than completely holding the target duchy, having 80%ish warscore, and then waiting for it to tick upwards and suddenly seeing Maurentia join the war against you.

Maybe, although in my experience they'll tend to join at the start of the war. But, yep if there are other holdings in the enemy realm to siege and you have the troops then there's no reason you shouldn't.

If I'm in a position to engage in holy wars then I'll try to declare several at once before raising my levies if there are several independents in the region, so that I can defeat them each in turn and then move onto the next while I'm waiting for the warscore to tick up. It can be more risky, but they're all likely to be joined by each other and the same bunch of infidels so you only have to defeat them all once.

That's definitely the fastest way to expand, but when you're starting out, you want one decisive holy war to cripple a nearby enemy and strengthen yourself; you probably don't have the resources to take on everyone in the region. I like to wait until someone in the area is otherwise engaged and has dragged some potential allies into the fight as well, before making my move. For giants like Maurentia, the Fatimids, France, HRE, etc... best to wait until they're otherwise occupied before holy warring their brothers of the faith.
