They've just getting started so you'd have to wait quite some time to get it all in one pack.
Besides if you got steam you could buy "Crusader kings 2 Collection" right now, but it wouldn't include all the DLC.

Considering what happend to EU3, I'm guessing they'll never do a "complete edition" ever again. IIRC Johan has even explicitly said so.
Now I suppose there will be package deals somewhere in the future, but presumably not before they've released at least the 4 planned "big" DLCs.

Yes. The "complete edition" for EU3 only contains half the expansions. Paradox originally thought the game was through its lifecycle way before the fans did. 
Now, buying something called "complete" and not getting everything obviously annoys people, so Paradox vowed never to call something "Complete" again.

CKII will never be complete because we will get endless DLCs and the game will continue to improve and improve.

Another thing. If you buy it on steam you need to be online to play. There is no physical copies for sale are there?
I like having my games physical. Is there somewhere I can buy it where I don't need to be connected to the internet in order to play it and allows me to have the game in a CD (call me old fashioned, but I like having a copy in case my computer crashes ... again! )

The Steam version of CK2 can be played offline, and has no DRM as far as I know. You can freely copy the CK2 folder wherever you want it to be, and run it without Steam, or just run the CK2 launcher insider it's folder to start the game without Steam. However, you still need to connect to Steam to get the latest Patch and/or DLC, but that's a one time requirement.
btw, there ARE physical copies sold... except they all run the steam version, meaning you still need to go online to install and update it once in a while, but you don't need steam running to play it.Good to know ...

I bought my copy physically as well.
Still, you do need to have internet access to install it (it automatically updates to the latest version anyway).
Even if your computer crashes, you will not lose the game. Steam games are installed to your account, so even if your computer crashes you can just log into your account and your game will still be there.
No, you don't. You don't even need to start Steam again after you've installed it.
You can get it from Gamersgate. Obviously you need the internet to download the thing, but it's doesn't go through Steam.

Marshall, I don't think Paradox announces sales on all the different outlets, the big 3 being Steam, Gamersgate and Amazon. At least on GG you can sign up to be notified by email when a sale occurs. I have purchased over 100 games there and am quite satisfied with them. Sometimes, they are Steam codes, but often not, as is the case with current Paradox games there on sale (Magica is, Supreme Ruler maybe) http://www.gamersgate.com/games?prio=relevance&q=Crusader Kings
Click on the DLC / game and then the appropriate check box (Alert me on price drops) under the photo (right-hand side).
I wish Steam did the same thing. On Amazon, I just started buying games there, you might get a notice if you add something to your wishlist, but I'm not certain.
ETA: Be sure to read the fine print on DLCs on GG. You may need their version of the original game.
