I haven't played EU4 in several years and want to give it another go. I was wondering if anyone has any suggestions for settings to use and/or what expansions that should be enabled/disabled (for example, it seems like some people have said to disable conquest of paradise).

Conquest of Paradise is fine. Really, only a couple DLCs have mechanics that are better left out, whih are: Mare Nostrum (Condottiere and Raid Coasts), Golden Century (Minority Expulsion), and maybe Leviathan (Pillage nonsense).

What DLCs are necessary? Not many. Mandate of Heaven for the Diplo-Macrobuilder; either Wealth of Nations or Dharma for Trade Company mechanic. All the other DLCs are different tiers of "nice to have".

PCGamerN has a list of all updates and what they contain that is constantly getting updated whenever a new DLC drops. It is a rather well thought out list if you are interested on seeing why you would want to get each DLC.

Curry favors is from Leviathan and I would recommend the DLC for this, even if pillage capital is a steaming pile.

If you have all the DLCs from the subscription service or the Humble Bundle, and it is only a question of enabling/disabling, I would definitely disable Conquest of Paradise to not have busted and bugged North American natives. I don't own Mare Nostrum myself, so I can't tell you if its impact is actually negative or just not very positive. We have had patches where Golden Century was worth disabling just so Spain wouldn't be #1 great power every single game, but that doesn't seem to be the case currently.

As for other settings, a lot of people don't know that turning off the "Limit Idea Groups" option is Ironman compatible. It is good to keep it on for multiplayer, and for beginners to avoid a certain pitfall, but otherwise you can just turn it off.
