One more question!

Again playing as England, Naval Tech is 8 and I have The Quest for the New World. So I zoom around the Azores and Africa discovering those parts of the ocean. They are both 'greyed out' (more yellowish actually). I have 5 colonists waiting to start colonizing... I'm thinking the Azores may be out of my range, but Africa doesn't seem to be, but clicking on it (as shown in the tutorial) does nothing. Help! (again!)

You should be able to send a colonist unless someone else is sending one. Also in the top left interface you can recruit conquistadors (generals who can explore) and navigators (admirals who can explore).

If the islands are still under terra incognita, you'd have to have your explorer ship patrol around the island for a bit.

When an explorer reaches a sea zone, he has a chance to remove the TI of nearby landmass according to his maneuver, so this might be a long process.

Ofc, there's always a chance that someone already beat you to it. In that case, go ahead and use some of your spies and incite natives until they're all dead.

Hmmm, it wont even let me see the middle of the island. The edges are visible but the middle isn't (as if it hasn't been explored) Could Portugal have already settled it? Greenland looks the same.

It's still covered by TI then. Go explore. If the edges are green then Portugal took it, however you can still discover it and incite natives to try and drive them out.

hire an explorer for your ship and conquistidor for your army in the ship, juts land the army and they discover the land
This. Exploring land provinces directly with the proper tool is much more effective than looping back and forth with a fleet carrying a navigator.
