This is my first time playing Great Britain, and I'm not happy with my colonial nation. They DOWd one of Spain's colonial nations. Spain tried to force peace, and they declined. Now I'm dragged into a war against Spain, Portugal and Burgundy. I'm getting crushed. I can peace out, but they want me to give up 3 major provinces. Is there any way to prevent this? I tried to enforce peace on Spain's colonial nation and they weren't going to accept either.

Sadly that's by design. Once a war goes global the AI isn't interested in strictly colonial concessions anymore, even though it should be IMO.

The other problem is that it seems as if Enforce Peace is useless and the AI CN never ends the war in response.
