Is Co-Op mode still possible in 2.2?

I have a friend I want to teach how to play the game again under 2.2 and figured it'd be a lot easier to do a run through in co-op mode...

I'm not sure what you mean by Co-op mode.
It is possible to play a 2 person game, with player clustered starts so you find each other quick, and you can agree to sign defensive pacts immediately. There is no dedicated co-op mode that I'm aware of where you are forced in a defensive pact/federation from the game start and have knowledge of each other without exploring.

If you mean where the host could start the game and the joining player could use the console command "play 0" to play as the same empire then no, they "fixed" that in 2.0. Even the scripting that lets you change which empire you're playing as has a check in it to prevent it from working if another player is already playing it, so there's no way to mod this back in, either. Sadly, there isn't any way to play the same empire like you can in EU4. You're stuck playing two different empires using the "clustered players" start for now (as mentioned above).

Co-op mode is possible op. I play with my spouse all the time. You just host new mp game, set password, they join and you typically start next to each other in some fashion using spiral arms, but you will be playing as separate empires.
