SO, my first character made it all the way to the end of the first chapter of the game (where you've taken care of the edict) and I think that I've made my character wrong.

The type of character i typically play in RPGs on my first run is the stealthy charismatic type character. I chose diplomat and doubled down on hunter for bonus subterfuge (plus bows are my second favorite weapon type). But, looking through the types of weapon specializations, i don't see anything for daggers. I figure they're in dual-wielding, but that gives me an axe and a hammer, and I don't really want that.

What would be best to build a stealthy melee/assassin-type character?

Also, without spoilers, can anybody who's completed the game tell me just how far evil or good you can go?

Dual Wield is definitely the way to go for that, and there are plenty of talents in the agility tree for being sneakish and putting on major hurts from stealth. You can switch away from the axe and hammer to daggers within the first couple of hours (in fact, my dual wield character is using double daggers at the moment). If you double down on dual wield you actually start with a sword and dagger I believe (I didn't do this...chose lightning magic as my secondary instead). Even without the stealth talents, dual wield has been pretty fun. I'm also a Diplomat. :)
