I don't think there will be and if you are worried about it being distracting, they have stated they are making the animations subtle or if you are worried about performance, their wouldn't be many figures on the screen at any one time.

That being said - there were a lot of mods for CK2 + EUIV which cut low priority graphical features in exchange for perceived performance gains. I'm not sure if animations will turn out to be viable for that, but I'm sure that sphere of modding will live on in some form.

I think you want to turn them off cause you don't like them? Would be interesting if that's possible I guess. Though they are quite subtle looking at the videos of them.

Though if it's for performance it might save you 0.5 FPS total on a potato. The animations look pretty light that they wouldn't really need much of your GPU or integrated GPU.

Are women / men who you find in the wilds still going to die rather quickly?

In CK2 they didn't die quickly ALL of the time or even like consistently. But you could definitely sense there was some bit of code in there that caused them to die a bit earlier, simply to balance out the random finding of good spouses in the wild.

Sorry if someone already answered this, but I can probably help: In CKII, such a character would have been marked as non-essential. The way to tell the game to treat a character as essential is to mark them as an important character by right-clicking their portrait and clicking the star button.

The reason CKII programmed it this way was Paradox has to purge the total in-game population for the benefits of in-game performance, so what you're basically doing with the important character system is telling Paradox to keep their hands off that specific character.

Thanks for doing this story format to illustrate game mechanics. This is super helpful -- both for me to understand the game's maturity/depth as well as giving me something to point my friends to so that they'll gain interest in the game. I'd encourage you to do more dev diaries like this one!
