Sounds excellent to me. I love that they have their aspirations and will decamp when their needs are not being met.

Well you would not likely stick around where the sun never shines on your birthright, or why stay with people who don't care about you. In such situations you would probably not be worse off leaving and hope for better times somewhere else.

Perhaps to balance it out (and prevent the CK2 method of just inviting claimants to make a super-council with no intention of pressing claims) recruiting claimant guests maybe should bring some manner of penalty with the holder of the title their claiming, and also with the invited claimant if their claim is not pressed after a certain amount of time.
In CK2 you have the pressed my claim bonus, maybe a negative "has not pressed my claim" opinion modifier would be an ideA

Should only apply if you actually have promised to press the claim, otherwise it don't make much sense.

But they get courts in CK2, even if it's usually just the Baron's family

They usually are just alone since they don't marry. Even patricians tend to be on low manpower to run their courts.

Will wanderers move through adjacent realms or teleport randomly? I'm saying that it would be easier for central European realms to attract wanderers than fringe realms in Scandinavia. Could be an interesting aspect of the game
Would be neat if they moved to realms that suit them, like a Danish-Norse religion wanderer that is a zealot will not travel to catholic nations, and a norse religion follower that has sympathy for a neighboring religion more likely to travel there, also a warrior/knight character will be more likely to travel to a county with a warmongering lord.

Well you should probably be given the option to hand them over to whoever they cause problem for some opinion bonus or similar and if the Wanderers know that is likely or not they should not come to you;)

I suspect you kinda can by recruit and then imprison them but that feel like a quite workaround and would likely give tyranny or whatever penalty you get for doing so, which Im not sure make too much sense.

Is there a mechanism for culling excess courtiers globally, or slowing their creation as the game runs long?
I think one of the reason they changed it is to have a mechanism for that. This all sounds like there will be less courtiers on the map by far
