Do we have any information on when the beta will take place, or when we will be notified that we are selected if we are?

I found it difficult to prioritize the testing categories. I would probably revise it again if given the chance. I marked historical accuracy as my lowest priority, as I think the gameplay experience is more important to start with.
No, I think it will be a waiting game. First, the applications don't close for another week. Then they will start looking through the applications and deciding who to pick. Obviously we can't be sure how many people will be invited into the beta nor can we know how many people will apply (several hundred [if not thousand] I would guess). I would guess it will be early next year.
I didn't get the option to fill the Introduction area. Did this happen to someone else?

The introduction is a section header, not actually something you van fill in.
So as a veteran of a few betas, I'll answer this for you.
It is indeed a waiting game, as even if they start going through them, they do need to wait till it is over to make final selections. There is a limit of how many they will accept as they need enough resources to be able to deal with the number that they invite.
They will receive a massive amount of applications for CK3 as CK2 was a massively popular game, and so that will slow things down as it takes a while to go through all the applications. Once the invites go out there will be a few more days of downtime while they await people accepting to actually be a beta and send in the NDA etc, as end result, this is not something that can be automated much and doing one offs isn't an efficient use of time.
The people that deal with this are amazing, but they have a lot on their tables, so just be patient and be as I once was; ever hopeful that you are picked.
Back when I first applied, as I just admitted to the guy that handled that beta group (@pdxcon), getting his email was one of the happiest days and I literally did a happy dance in my office
