For those that have did this, what are your thoughts? Was it fun, would you do it again, etc etc?

Ive done it. Its great, however id say its only worth it if you arnt a massive overpowered blob. I wouldnt bother with an immortal either. Theres nothing unique or fun with it in Eu4.
Consider starting in some of the later start dates of CK2.
Large empires really don't ever fall apart throughout the late game of CK2 from the early start dates, and you get fun stuff like e.g a Byzantium with 2500 development in 1444 otherwise.

You'll probably get a bordergore mess when you convert, but it can be quite fun. I suggest you take some time to correct the borders and the diplomatic situation
Did it, it's fun. After I tried to pursue with Victoria 2, but there's a bigger gap between EU4 and Vic2 rather than CK2 and EU4. I lost my fun somewhere around 1860.
I dislike just one thing in conversion, it's about states and territories. You can't choose (or I didn't find it) which part of your realm will be state or territory. A bit frustrating, if you want to roleplay a big realm.
And I agree with Rashie, Charlemagne start goes to big empires in EU4.
