How does the ai choose crusades?

Im new to the game and i decided to play as the danes, i united denmark reformed the religion and was doing quite well, then the pope decides who to crusade against so they have choices of muslims in anatolia muslims in spain hungarians attacking christians in central europe and out of all of those they attack me but all ive been doing is fighting other pagans. Thanks to this i lose half of my nation and during the war a nobleman just leaves my kingdom with all his land and i didnt get a single say in it

Basically, each religion has a list of kingdoms it might target. That list is weighted so that the higher the weight the more likely it is to pick that target. It basically adds all the weights together, then picks a random number between 1 and the total of the weights. So if Kingdom A is weighted at 500 and Kingdom B is weighted at 1000 and there are no other valid targets, it has a 1 in 3 chance of targeting Kingdom A and a 2 in 3 chance of targeting Kingdom B.

There is a chart on the wiki that lists the weights for the various targets. https://ck2.paradoxwikis.com/Crusades,_Jihads_and_Great_Holy_Wars#GHW_target_weight

Protip:
Pope usually only holds Rome. Gather all your levy, put them on ships and navigate to it through rivers. Then land right on Rome and capture all its holdings. Boom. You won crusade.
