However, this is not an issue. The game has a dynamic system for when the Great Holy Wars are unlocked. For Catholic faith it depends on having >75 fervor, losing control of at least 2 Holy Sites, region of France/Germany/Byzantium/Rome or date is past 1095, the longer the game goes after this date the higher chance of triggering the event. This way you can get the Crusades earlier or later than in real life.
