Please explain the issue you experienced in the most condensed way possible
Catholicism has launched three Great Holy Wars for the kingdoms of Jerusalem (twice) and Syria. All three have been successful, but within a few years the new monarch (and most of their family and Catholic vassals) has converted to the dominant local religion. Which in the case of Jerusalem lead to the second crusade - to take the kingdom from the very person who had been the beneficiary the first time.

Presumably these characters are making what in normal circumstances would be a perfectly reasonable decision (local populace going to like you more if you're the same religion). But in the circumstances it's obviously a bit of a silly and unrealistic outcome. Successful holy warriors and their new vassals might need some blocker/debuff to changing their own religion, and probably a boost to converting the newly conquered counties too.
