Please explain your issue is in as much detail as possible.
After converting to Hellenism as a Byzantine emperor, the Varangian Guard stays Christian. I've also reformed the Hellenistic faith, but it seems there is no way to convert them.
I also tried to give land to the Varangians, but the issue stays the same.
Steps to reproduce the issue.
Load the savegame and look at the Varangian Guard.
