Please explain your issue is in as much detail as possible.
If you, at least in your own court (I haven't tried with other rulers), create a matrilineal betrothal, when the two involved are of age and you arrange the marriage it will not be matrilineal but a normal marriage.

Steps to reproduce the issue.
Create a matrilineal betrothal between two courtiers, when they are of age, marry them when prompted and you will see.

It works for me. At least when I make betrothals with characters of other courts.

Tried that with both being my courtiers. Betrothal turned into matrilineal marriage with no problems. Sorry, I cannot reproduce.

Were they both underage courtiers when you betrothed them?

one was adult, the other still child
