I noticed the same thing when I was using roundabouts to create roundabouts/overpasses.
Maybe use the "S" road laying tool and try to replicate the deformed arc.
I tried it, it is not always perfect, but if you stick to the marks and angles the game is giving you, then, it should come out well-shaped.

The roundabout becomes malformed if you don't connect to the nodes. Place the template roundabout in the correct orientation so that the nodes are where you want them to be, then connect roads to it. As long as you join the roads to the nodes on the roundabout instead of the segments, the roundabout will retain its shape.

The best way to avoid this is to build the roundabout by hand.

First, lay out some dirt roads (because they're cheap) in a cross pattern sized to the diameter of your roundabout.

Next, draw the roundabout roads starting from each node of the cross. Use the curved road tool and turn road guidelines on.

Now, leave the dirt roads for bracing. You can now add roads at any point in the segments and they will not distort.

When done, bulldoze the dirt roads you used for bracing.

If you need to modify the roundabout later, put back the bracing roads first.
