I was wondering if churches are good enought to build for pagans at inland? I built 5 baronies in my capital (even got levy boost prosperty) and planning to build other holdings in other counties I have and I need money. but they are not coastal (I am playing as kiev and formed russia)
should I have temples? or cities instead despite not being coastal land.

Cities have better income, even inland. I only build temples as part of the '1 of each per province' rule. Both temples and cities have inferior troops to castles (not that barons have enough income to ever build up their holdings) as well as less troops. Temples do have better quality and number of troops than cities. To be honest, if you max your demesne limit and are stacking a bunch of bonuses on 5 castles in one province, you shouldn't have too many problems.

I think that building temples manualy is not worth it unless you have no other way to build a holding. build eihter castles or cities, depending on your acces to custom mercenaries.

Although I used to like having a capital full of baronies, I've recently found that it is far less effective than having multiple counties which have a lot of cities in them, because you still get the same levy but a much larger income. Temples are only nice if you want that piety boost

Unless you're Bon and one of the proper cultures to get Monastic Feudal government, go with cities and only build temples to meet the "one holding of each type" rule. Actually, I think it's probably best to just build as many castles as you can.

the income between inland city and temple is quite close. base income for city is higher, but maximum tax for cities is 50% and for temples it's 70%, so the actual income with fully tax shifted laws for both is similar (cities pay a little more i think). it takes a high level of legalism to shift the laws all the way to the left, though. for most of the game you're stuck with Slightly Tax Focused (40% city, 50% temple tax)

if you get the new architect bloodline, cities win (the first 2 levels of the additional building add +3 base income each, also city tax is 5% higher with the bloodline).
on the coast, cities win anyway due to port buildings (and potential boost from MR tradezones that don't affect castles or temples).

If you want a good income source, and if your capital is coastal (and has 6-7 holdings slots), consider building a city == and permanently holding it yourself == even with the "wrong holder type" malus, once you have the economic buildings built, it will deliver more income than your castles in the same county. The drawback is that its garrison and levies seem to depopulate themselves, meaning that it gives you no levies and has no defense against siege once the "upstream" holdings have been captured. So, given that, there is no point in spending the money for military buildings in that city.

a province must have a castle, temple and city before you can fill the rest of the slots with the holding type of your choice.

if it lacks a temple for example, you can't build cities or castles in empty slots unitl you built the missing temple.
