Do I need to change these when I want to edit a scenario? How do I choose a new one. Is there any info in the forum to help choose. I read the DNA changes the picture of your character?

You can change them if you want, and then the appearance of the character will change, but if you change the dna of a ruler, be sure that you change it in the scenario file itself
1066_scenario, 1187_scenario and 1337_scenario and in the appropriate character scenario files
