I would like to know if I can easily change the upgrade paths of aircraft. I would like to make it impossible to upgrade from normal planes to jet planes.

Easy to do, just add a blank model between the regular and the jet types. Make sure you change the techs to activate the new model numbers and change the icon and unit names to apply to them also.
