I read in a few random HOI2 guides that some countries are better of changing their land doctrine paths -- I didn't know that was possible! Did I just read a weird guide or two, or can that be done?

It can be done in Doomsday and Armageddon. You have to abandon each doctrine up to the main branch, once you abandon that you can choose another main doctrine branch.
It is not always a good idea; even if another doctrine branch is "better" if you don't have the tech teams to research it quickly you will be worse off.

Just remember to check which doctrines your Tech Teams are more suited for before you abandon anything.
