I have ~1500 hours and have never done any of the bookmarks except 769. Most of the stuff people that people are saying are "rare unicorns" are no more rare than the things that they list as "common". I don't think there is much you can count on being consistent in the 769 bookmark between playthroughs. Byz is consistent to some extent but even they can be taken out by hordes or turn into a theocracy, etc. I've seen AI Francias, HRE's, Miaphysite Egypt, and reformed pagans more times then I can count on my hands. And that is just the stuff people have mentioned in this thread.

Different pagan groups are scripted to become more responsive to foreign missionaries at different dates. IIRC for Germanic that is around the year 1000. For eastern pagans it's around 1100 - 1200.

As the AI realms reach Military Organisation 4, they will start holy warring pagan as well - either converting or conquering them.

In games I don't plan on interacting with Scandinavia I spam them with missionaries. They convert all-the-time, even before 1000. I have a collection of converted Ragnarr screenshots mixed in with all of my other uncataloged screenshots I like to marry his house into my own whenever possible if I'm playing a Catholic Realm.
