Can someone please tell me how to train carrier aircraft. Also I can't have them take off of the carrier. I don't have a problem with any other aircraft as I can pick missions and train them. Just the carrier aircraft. Please help.

We have updated our Community Code of Conduct. Please read through the new rules for the forum that are an integral part of Paradox Interactive’s User Agreement.
Move the fleet with the carriers out of the port then click the "airport" icon next to the fleet now you can train them - I think you can even train the fleet at the same time order the fleet to train then select it again and then order the planes to train.
To train Carrier aircraft move your ship out to sea, then select the aircraft symbol above the ship picture which shows the squadrons. Then select the training button just like for ground squadrons.
In the air mode (F3) you can also move planes to and from a Carrier. I usually have ready trained carrier planes on land bases that I can swap with the rookie planes on a new carrier.

I tried that, but all of the options except for no retreat and day/night ops are colored. I've tried clicking on the training and other tabs, but they are all greyed out.
Sounds like the carrier is not at sea if those aircraft options aren't available. Make sure the ship doesn't just go back to port which I think it might do if it doesn't have a mission. I've had that happen, but usually the ship will remain in the sea zone.
