Carrier Aircraft: How to Pilot Exercise?

The carriers can't be in a port. So either train the airplanes while the ships are also training, or instead just manually move the carrier wings into a land airbase, train them there, and then move them back to your carriers.

Put the carriers at sea, select the "airbase of the carrier" then select the airwings there and click train or use the (Shift+) K hotkey as you usually would do.
I think you can also select the carriers in the task force overview with the list of all ships in the currently selected task force, and then select their airbase there, but not 100% of the top of my head.

How do I exercise them while at sea aboard their carriers?
I tend to exercise them while the carrier is building (I delete the ones that are formed upon completion, or send them to shore for the next wave of carriers).

I usually select them by selecting the Task Force (or Fleet) and then clicking the "airbase" icon at the top of the Task Force window. As said you can exercise them while on the carrier as long as the carrier is not in port. If I don't pre-train them I have them exercise while the carrier is exercising. Normally they will finish before the carrier itself does. Note, that if the carrier returns to port for any reason (like needing repairs) they will stop exercises and you will need to order them to start again once they leave port...probably the main reason I pre-train them.

While you're training your future carrier air wings on land, you can also get some use out of them on regular air missions. They won't train as fast as if you just leave them on Pilot Exercise. But sometimes you need a few extra FTR or NAV or CAS to grab air superiority or harass some convoys or gain the ground support combat bonus for land troops in some secondary theater, perhaps one that's otherwise empty -- and there they are. Carrier planes don't have to fly from carriers.

They do tend to have short range, so probably not the best choice for your main production. But you also don't have to leave extras in the stockpile until a carrier needs them. Take heavy air losses in a naval battle? Swap out the entire air wing for a fully trained one from your backup land base, then put the damaged one on land duty while it reinforces and trains the newbies back up.

It's easy to do, but like somebody else said it can only be done when your fleet is not at port. You can move your fleet 1 tile into the sea to exercise your planes. Aircraft carriers essentially function like small airports, so you would exercise a plane on the aircraft carrier the same way you would exercise a ground based plane.
