I waged a war (as Duchy of Apulia) against the Kingdom of the Zirids. Upon winning sieges, I immediately annexed their North African provinces. However, the Zirids being industrious rulers, conquered Rosello and Empuires in Catalonia. I besieged both and conquered both, but instead of annexing them immediately, my banner appeared on them (like on Christian provinces).

When negotiating a peace deal, I can't demand those provinces just as if I was fighting a Christian and had no claim on them.

Bug?

I wonder whether those pesky Zirids did something sneaky like grant the land to Christians at their court after you'd begun your siege? I'm not sure whether that would explain what you experienced.

Nope it was definitely part of the Zirid royal demesne.
