Just curious.
If I capture Ragusa playing as Venice, then I'd rather destroy it to leave some space for my own center of trade in Venice.

I could do so in EU3. I can't remember anything about EU2 though - I thought they were hardwired into the game by the scenario's txt file.
Is this the case in EU4 as well?

Not exactly, but by capturing Ragusa (and other territories within the Ragusa trade sphere) you get more trade power there. Combine that with a merchant and a trade fleet, and you can send increasing amounts of the wealth from Ragusa to Venice. But you can't destroy it outright.

No single province is the Center of Trade for a node. Some provinces are called Centers of Trade (Or so says the tutorial), however, but they only provide above average trade power to a trade zone now. Trade nodes are permanent, as well. No destroying them.

What Tyrannis said - The only thing related to centres of trade are minor bonuses put on certain provinces, due to their historical significance to trade (Also applies to the provinces where rivers meet the sea in places like America if memory serves)

I don't think the nodes themselves all provide significant trade power. For instance Antwerp itself has less trade power than Zeeland. The nodes are precisely that, shipping and/or trade centres for their surrounding hinterlands, or in game terms, points from which the collected surrounding trade can be steered or otherwise manipulated.

There are two province modifiers to trade power. One is being an estuary of some river while other is predefined "is an important center of trade". Both give +5 to local trade power. For example, Lisboa has both- +5 from being center of trade and +5 from being Tagus estuary. These things add up. And for example, when you're looking south to Africa, it is always good idea to take Benin, for being Niger estuary gaines you +5 and also, to colonize the Gold Coast, for it has being important CoT. These little things add up a bit.

Zeeland doesn't give more the Antwerpen though, for Antwerpen has important CoT modifier, while the real prize there is Holland- important CoT + Rhine estuary = lot of trade power.
