I've started a war that doesn't seem to be going my way against my king, and he's just offered me a white peace. I'm pretty sure my character is going to die fairly soon, and I want to continue the war as I'm still not sure who's going to win, but if I lose I'll be imprisoned. Will that risk carry over to my heir, or will he be able to end the war without any penalties because he didn't start it? (You guys need a "what if" thread, because I've had like a million little questions like this so far, that are just too esoteric to find an answer on google or the wiki. lol)

depends on which war it is. Some end with your death. Those that don't do not offer any protection for person who inherited the war instead of starting it. So, no, if you die and your heir is still at war, and he loses, he will be put to prison.

exactly this, I noticed a few times that when I had suddenly a young boy in prison after revolt, instead of the evil Duke I wanted to get rid off, there was no disabled tyrant modifier for revoking traitor's titles as the boy did not have the idea to rebel himself.

So, we ended up settling with a white peace, with him as the clear victor. Immediately afterward, he demanded that I hand over some of my land to him, and we started another war, even though he already had two separate other rebellions on his hand. During this, the HRE declares war on france, and I bring croatia in to back me up. Things are going crazy. lol
