Why is it when I'm building train tracks underground and try to connect them up with another track. It always wants to pop above the ground. This is soo annoying

No you don't, I've had it with an underground highway roundabout as well, before terrain editing so the only thing I could do was to follow the advise Sheller gave.

For underground roundabouts, i suggest to use one of the standard roundabouts you can take from the road menu and then upgrade the road to whatever kind you prefer
