I know what you mean, but I think it's due to the shoulder on the side of the road being wide so when you make a triangular lot there's more road-shoulder than grassy area.

When I have places like that, I put in some single and double square parks I made. They contain just trees and fill in the places nicely, besides, they boost the land value too. :)

I made some "industrial parks" to fill in the spaces between roads. These are small 1 x 1 , 2 x 2, and 3 x 2 sized plazas with billboards on them. They're configured not to attract tourists and are used to fill in the spaces, but can increase the land value too. The industries seem to like them when I place them as I get a swarm of smiley faces every time I place them. :)
