As far as I am aware, breaking truce gives +5 War Exhaustion, -5 stability and lowers the target nation's trust in you.
Does it have any other ill effects, particularly with relations/trust with other nations?
I'm trying to break truces more often in my games because 5 stability and 5 WE is nothing for a well run nation. I just need to see if there are any other ill effects. This is assuming you also have a valid CB so you don't suffer even more stability loss and WE.
