There is a "disruption" value applied to the supply provided by a hub when it is bombed even when the enemy has trucks and trains to spare.Logistic strikes target enemy trains, trucks carrying supply (if the enemy hub is motorized) and railguns. Can be performed by CAS or tactical bombers, but not strategic bombers.
Strategic bombing targets the railways and the hubs themselves. Can be performed by either strategic or tactical bombers, but not CAS.
Note that as long as your enemy has enough stockpiles of trains and trucks, their actual supply won't be affected when doing logistical strikes. It's only when they start running out of either when their units will suffer from low supply.
So, in general, if you want to disrupt your enemies supply, the fastest way is strategic bombing as long as you can bomb faster than they can repair. Logistical strikes will only be useful to this end if you can manage to bomb trains and trucks faster than they can produce them, and grind them long enough so you deplete their stockpiles, although disabling their railguns and also providing ground support can be more beneficial to combat in the short term.

CAS are extremely efficient at taking out trucks and can rapidly deplete stockpiles, at least the AI's. As the Soviets, it took me about ten days of logistical strikes by 800 CAS to wipe out the entire German truck fleet (some 1,800 of them).
