I usually just bounce ships back and forth along a coast to eventually discover land. Is there a better way to do this? Will I eventually discover land by just parking an explorer in the coastal sea province?

You can make them patrol to make bouncing back and forth a bit easier. Aside from that, no.
Try and get an explorer with as high maneuver as possible. That will help a lot.
You can't just park them on a province, they have to be moving. As was mentioned, use patrolling.
