Best Religion for WRE

I'm about to do another run of the WRE, and I was curious what people thought the funnest religion would be.
Would it be better to stay nicene? go Hellenic? Latin solar? or is there another that might have some interesting events in the region?

I'm a fan of conquering the WRE as the Vandals and ruling an Arian Romano-Vandalic empire, myself.

But other than that, go Latin Solar so you can worship the sun like Elegabalus.
