when you say two player do you mean cooping or playing different nations?
if you mean cooping then i would choose a nation like bohemia so you can form the hre relatively easily, ottos are good also.

Start as Lithuania, eat Poland and push into Asia all the way to China. Annex Ming and pick Grand Army and Millitary Drill and you suddenly have the finest 400 regiments in the world, and thats not even breaking the forcelimits. However, prepare to endure hell as your first two decades are defending from the Golden Horde. At least Poland is there to help you out ... for the moment.

I think the question depends on skill as well. I've heard some say the game can get really easy and honestly, have not found that yet. :p

Portugal and Castile would be a cool combo. Portugal could tech and then discover the new world while Castile focuses on defending Portugal and striking out into Europe. That said, perhaps it be better to start with nations that can each form major powers; so one player is an Italian city state, another German. Rush to form the Axis and conquer the world! :p

Castille and Ottomans.

Castille takes care of Iberian peninsula with PU's, colonize and take over all but North Africa.

Ottomans take care of Nort Africa with PU's, beat the hell out of hordes and Europe.

As Ottomans will take alot more time conquering Europe than it takes for Castille to take over west, south and east Africa they should move to India and SEA where the 2 players will eventually meet at the old Timurids borders and eventually surround Ming ( OE north Spain south )
