Really? Poland and Sweden? Sweden I can imagine. For Poland I am sure it can be done, but don't they have a lot of trouble with events?

Best nation in plain 1.08 vanilla GC: France (specially Britanny France) followed by Austria, but Ottos are my favourite for an early WC.
Any nation (except some pagans) with a good monarchfile and no messup events is suitable for a WC and I believe the last beta made WCs even easier for countries like England, Spain and Portugal.

WC with Poland is indeed possible if you can get Poland off on the right foot. You just have to grit your teeth and deal with alot of upheaval in order to get your plutocracy and centralization sliders high in order to give those evil nobles the shaft. Make sure to take Hinterpommern, Silesia and Kustrin as well, they'll convert to Polish culture. After about 30-50 years of wars and rebellious nobles, it'll start to get better.

Only toned down. Now you can actually play a few months and hope to avoid one. This was impossible before. On real high BB I believe you can expect one in every 3rd/4th month or so. Do not know what this translates into in percentages.

I was thinking about posting the same thing, however (at least in the AGCEEP), the Wars of Religion do not have to be a major problem if you choose the right course with all the events. The worst thing you'll get is a couple of stab drops and RR increases.

The increased chance for civil wars was implemented in one the 1.08 betas. That's one reason why I have not moved beyond 1.08, although it sounds like it is more reasonable now that it was when Johan first did it.
And yes, I would guess that WC has become much harder. Basically you have to stay at +1 stab or higher at all times, which is a bit hard with all those non-Christians to incorporate. So you need to prepare by building lots of FAAs before starting the WC - lots of delay for that.

Well, I once got a civil war on plain 1.08 just when I hit +1 stab. Really! It sucked. And, with all due respect to Paradox for making this awesome game, I think these guys are putting too much effort in trying to things "realistic" by making CW so commonplace. At one point you just have to let playability be more of an issue than realism. And besides: what people do you know that, when their fatherland controls half the world and is still on top, rebel against their leaders because their reputation is bad? Sure they'll do it once. Maybe twice, but not twice in the same year, and certainly not within four months of the last cw.

Not to mention the kick-ass monarchs and leaders that you get. The only thing that is bad about Spain is that after the War of Spanish Succession, you either have to go with a French or Austrian monarch. Whenever I play as Spain I always choose to side with Austria though
