Portugal for its optional call into the hundred years war, and starting out with explorers allowing you to discover the new world and Africa before picking the idea. (Not to mention, Castile can be a strong ally once they unite Iberian Spain)
England also seems very doable, once you have ended the war - either by letting go of some of your french territory (And possibly retaking it later on), or ending the war with a white peace. They have plenty of things to do with uniting the Isles, and are in a position to discover the Americas early on if they manage to steal Iceland from Denmark/Norway.
