The usual suggestion is Portugal: big enough to see all mechanics, but not too big to be overwhelming. You will taste colonization, war and politics with very (if none) chance to be wiped out or make terrible mistakes (as long as you keep Spain friendly)

I will second Portugal. Very easy to stay out of complicated European politics, and you get pretty much first dibs when it comes to the colonization game. Keep Spain on your good side.

Spain was a cakewalk, but they tend to get involved in a lot of wars. Portugal was super easy too.

All this in EU3 mind you, but I guess it's gonna be somewhat similar.

It's also consider some later starting dates. Quill showed off a 15xx starting date for Portugal that looked rather nice. The tech for colonization is there and you can get a jumpstart on learning the trade system which looks really cool.

France or Castille in the 1492 start is my recommendation. You're big and powerful enough that you can try to do anything you want, and even if you mess up it doesn't threaten your existence.

Playing these countries while learning is also the best way to have an interesting game as them, since they're just too powerful to be much of a challenge when you know how to play.

Portugal is a good choice for experience players who dont want pressure of being in middle of Europe cuz it usually means endless wars. If youre a total noob with no clue of how colonization and other key mechanics work, Portugal is not a good country. No matter who you play as, you will be dragged at wars, AIs will come at you sooner or later, you can count on that.

The best 3 countries for a beginner are the following:

Castille - the biggest country in its immediate neighborhood, nobody can beat you one on one (bar France), and you can practice warfare, colonization, you even have a country unification to pursue (Spain).

France - the European Behemoth, or Big Blue Blob as its known from early EU3 days. What to say about France? It can do everything, and also excel at everything... Just dont allow any of your rivals to get bigger than you and youll be just fine.

England - last of the 3, on its own it has the best noob position to play around, however in EU4 it will start at war with France (the end of HYW) and that might be a bit too daunting for a new player. Apart from that, you can either decide to push into France (this will be hard and require experience) or you can give up European possessions and focus on colonization and unification of Great Britain.

I would suggest to look outside of europe for your first game.

The American nations have only a few neighbours, and with that some nice casus belli if it's anything like eu3. This will give you an east taste of how to keep your country running and conquering your neighbours. Once you've conquered your neighbours and got a stabile country it should be well before the europeans start to attack you. I'd quit before they come.

If you're playing with Japan you got a lot of diplomacy going as you will have a lot of vassals in Japan but there should be little warfare. Try to diplomatically conquer some land till you've got enough of it and feel ready to finally enter the european stage.

Now you can pick one of the strong nations of Europe and you should be able to easily survive with the skills you got from above suggestions combined.

Just remember that a lost war is not a lost game. Even if you start as a mighty France and get reduced to a minor, keep playing!

Things might play out differently in EU4, but in EU3 I don't think playing a "minor" is good newbie advice. While things might be less complex, the lack of resources and sloowww growth can get incredibly frustrating. It can give you the impression that there isn't much to do in the game beyond watching the clock move forward.

That's why I don't suggest to sit out the full game with those minors. But starting your first game in the middle of Europe can be quite overwhelming for some people.

Learning how to properly lose a war is something even veteran have not learned sometimes. Some vétérans reload everytime something negative happens. I've played with ragequitters in MP and it is not fun.
